Wild-harvested from the Pacific Northwest, Porcini Mushrooms are known for their nutty flavor and tender texture. Dried on racks with fans instead of heat, these higher-quality mushrooms reconstitute very nicely. They are delicious in risotto,  pasta, and hearty braises. Bonus - after straining out the reconstituted mushroom, use the liquid for soups or braising meats.
