Cascatelli by Sporkful - 6 Pack

From the mind of two time James Beard Award winner Dan Pashman, creator and host of The Sporkful food podcast, comes CASCATELLI (Italian for “waterfalls”). Three years in the making, this original shape was created in collaboration with the artisans at Sfoglini. Cascatelli is designed to maximize the three qualities by which Dan believes all pasta shapes should be judged:

  • Sauceability: How readily sauce adheres to the shape
  • Forkability: How easy it is to get the shape on your fork and keep it there
  • Toothsinkability: How satisfying it is to sink your teeth into it

Listen to the story of Dan’s quest to create this shape in a special Sporkful series entitled “Mission: ImPASTAble,” available in your podcasting app or at And try cascatelli today to experience the next chapter in pasta history! Try it in our recipe - Cascatelli with Double Pork Ragu.

All it's cracked up to be!

I learned about this pasta on NPR. Robin Young interviewed Dan Pashman about his new pasta. That put me on a quest which had me listening to all of his podcasts, both on the pasta and his new cookbook. I bought a case of the pasta from Sfoglini and the cookbook from from Amazon. This picture below is what happened when I took canned pasta sauce from Trader Joe's and added a few other ingredients. Tasted fabulous and, as you can see, it had Sauceability, Forkability, and Toothsinkability.

Most importantly, I learned that shape really does matter. I call that -- you guessed it -- Shapeability.

Now I'm going to try the two new shapes that Sfoglini and Dan came up with.

Quality of the highest order. Holds sauces the best … 10 of 10

Super tasty!! Reminds me of eating bite sized lasagna. Truly an innovative pasta experience!

fun to eat and wins the forkability, sauceability, and toothsinkability tests

I never thought I'd find a pasta I like to eat as often as Sfoglini porcini trumpets, but the Sfoglini cascatelli satisfies delightfully in a different way. It's great for holding sauces, and the combination of chewiness and softness is a refreshing change from uniformly soft pasta. We love using it instead of fettuccini for Tuscan chicken bolognese. Yay, Sfoglini!
