Our Organic Whole Grain Collection is made from a blend of premium semolina flour and stone milled whole grain flours. From ancient grains like einkorn to hard red wheat from the New York’s Finger Lakes region, these grains come packed with goodness! They offer higher protein levels and the darker wheat bran has exceptional flavor, texture integrity and nutritional benefits. While the durum semolina, milled from the heart of durum wheat and a staple in traditional Italian pasta for centuries, is key to creating pasta that holds its shape and delivers the essential "al dente" texture for a better bite.
Sfoglini pasta is famous for its ability to "hug sauce". The bronze-cut method, another time-honored Italian technique, not only helps create our signature shapes, it gives each piece a rough, textured surface to hold more sauce.
We also slow dry our pasta at low temperatures for over 9 hours, preserving its flavor, nutrients, and the authentic taste that sets our pasta apart.
