Malloreddus, also known as Sardinian gnocchi, has been a staple in Sardinian cuisine for centuries. Its name is derived from the Sardinian word “malloru,” meaning “calf,” as its small, ridged shape was thought to resemble a young cow’s belly. Adding saffron to the dough is a regional practice that gives the pasta a distinctive golden color and a subtle, aromatic flavor. The pasta’s grooves and ridges make it excellent for holding thick sauces, particularly Sardinia’s signature sugo alla campidanese – a rich tomato sauce with sausage and saffron.

Saffron Malloreddus is one of my favorite pastas from Sfoglini. It is so versatile - I've used it for salads, soups and as the main dish. The infused saffron gives it a beautiful color and a lovely flavor note in lighter dishes. But this unique pasta holds up just fine with a heavier meat sauce as well. Please never stop making it, Sfoglini!
This is my favorite pasta. Love the shape as it retains a lot of sauce but the flavor of the pasta always shines through. Excellent texture!
I love all of the Sfoglini products I have purchased. My spaghetti sauce clings to the crevices and wavy shapes of the various pasta I have purchased. I love the different shapes. Would definitely recommend as this is my second purchase and I'm sure there will be more.
So much of pasta is all about the sauce--not Saffron Malloreddus! It has a wonderful, distinct saffron flavor that carries its own weight in your recipes. It has become my go-to favorite for a pasta salad. I combine Al dente (of course) Malloreddus (1 lb.) with generous olive oil, flaked blackened salmon, capers (to taste), one minced jalapeno, and chopped cilantro. Toss, salt to taste, and serve with freshly ground black pepper. I accompany this with plain arugula on the side. Heaven! Thank you Sfoglini!
