Our friend Healthyish In A Hurry created the ultimate Antipasto Skewers, combining the best of antipasto flavors with a surprising twist—pasta! Each skewer features a piece of perfectly cooked pasta, savory salami, creamy cheese, and a briny green olive, all assembled on festive holiday-themed picks. They’re the perfect bites that everyone will reach for first!
INGREDIENTS
MAKES 12 SKEWERS
- 12 festive skewers or toothpicks
- 12 pieces Sfoglini Quattrotini or Garlic Quattrotini
- Olive oil, to drizzle
- 12 green olives (pitted, plain, or stuffed)
- 12-24 slices of salami
- 12 1-inch cubes of cheese (we used Havarti cheese with dill)
DIRECTIONS
Bring a pot of generously salted water to a boil. Cook the pasta to al dente according to package instructions. Strain the pasta, then toss with a drizzle of olive oil to prevent sticking. Let it cool.
Add a piece of cooked pasta to the skewer. Then a green olive. Fold a slice or two of salami into quarters and thread it onto the skewer. Then add a cube of cheese to finish.
Refrigerate until ready to serve. These can be prepared a day ahead of time.
