Two-time James Beard Award-winner Dan Pashman, creator and host of The Sporkful food podcast, has teamed up again with the artisans at Sfoglini, this time to bring you Vesuvio. The shape takes inspiration from Mount Vesuvius, the volcano that towers over Naples and once buried Pompeii. A more modern creation, Vesuvio can be found in many shops where the volcano casts its shadow, but it’s rarer beyond.
Like all shapes in The Sporkful Collection, Vesuvio maximizes the three qualities by which Dan believes all pasta shapes should be judged:
  • Sauceability: How readily sauce adheres to the shape
  • Forkability: How easy it is to get the shape on your fork and keep it there
  • Toothsinkability: How satisfying it is to sink your teeth into it

Forkability Toothability

I didn't think I'd love these when I first tried them...was just curious. Now, next to Cascatelli, they are a favourite of mine and those with whom I've shared meals that included this pasta. Love everything about it; taste, texture, how it holds sauce...this unassuming, tiny mountain of pasta is worth trying if you've not!
