Vesuvio - 6 Pack

A Taste of Naples—Spiraled for Ultimate Sauceability

Three-time James Beard Award-winner Dan Pashman, creator and host of  The Sporkful food podcast, and the artisans at Sfoglini bring you Vesuvio. This unique pasta mimics the swirling, spiraling contours of the volcano Mount Vesuvius. Its ridges and spiral shape create multiple surfaces where the sauce can cling, ensuring that each bite is flavorful. Vesuvio achieves the three qualities by which Dan believes every pasta shape should be judged:

  • Sauceability: How readily sauce adheres to the shape
  • Forkability: How easy it is to get the shape on your fork and keep it there
  • Toothsinkability: How satisfying it is to sink your teeth into it

You can listen to the story of the revival of these shapes on The Sporkful podcast’s ongoing series, Mission: ImPASTAble" which also told the original story of Pashman’s three-year quest to invent Cascatelli and his work with us to make it a reality.

I didn't think I'd love these when I first tried them...was just curious. Now, next to Cascatelli, they are a favourite of mine and those with whom I've shared meals that included this pasta. Love everything about it; taste, texture, how it holds sauce...this unassuming, tiny mountain of pasta is worth trying if you've not!

The Best American Pasta

Unusual shapes made with premium wheat that mix and match with a variety of sauces. Life is too short, after all, to eat bad pasta!

The pasta was great and my wife made a great pasta salad for our neighborhood party and everyone loved it.
